Ingredients
  

  • 2.25 cups 270g all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1/2 cup 113g unsalted butter, softened
  • 1 cup 200g granulated sugar
  • 1 egg at room temperature
  • 1/4 cup 60g sour cream, at room temperature
  • 1 1/2 teaspoons vanilla extract 7.5ml
  • 1/4 teaspoon almond extract optional

Instructions
 

  • Prepare the ingredients. Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Mix the dry ingredients. In a medium bowl, whisk together the flour, baking powder, cornstarch, and salt.
  • Cream the butter and sugar. In a large bowl, cream together the butter and sugar until light and fluffy.
  • Add the wet ingredients. Beat in the egg until well combined. Stir in the sour cream, vanilla extract, and almond extract (if using).
  • Add the dry ingredients to the wet ingredients. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  • Drop the dough onto the baking sheet. Drop the dough by rounded tablespoons onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake the cookies. Bake for 8-9 minutes, or until the bottoms of the cookies are just golden brown.
  • Let the cookies cool. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
