Caramel
- 1/2 cup 100g granulated sugar
- 1/4 cup 60ml water
Custard
- 2 cups 480ml whole milk
- 1/2 cup 100g granulated sugar
- 1/2 cup 100g semolina (rava)
- 2 tablespoons 30ml ghee
- 2 eggs
- 1 teaspoon vanilla extract
Make the caramel:
In a small saucepan, combine the sugar and water over medium heat. Bring to a boil and cook, without stirring, until the sugar caramelizes and turns a deep golden brown. Be careful not to overcook, or the caramel will become bitter.
Carefully pour the caramel into the bottom of a 6-inch (15cm) square baking dish. Swirl the dish to coat the bottom evenly. Set aside.
Make the custard:
In a medium saucepan, combine the milk, sugar, and semolina. Bring to a boil over medium heat, stirring constantly. Reduce the heat to low and simmer for 2-3 minutes, or until the semolina is cooked through.
Remove the saucepan from the heat and stir in the ghee, eggs, and vanilla extract until well combined.
