Ingredients
  

Caramel

  • 1/2 cup 100g granulated sugar
  • 1/4 cup 60ml water

Custard

  • 2 cups 480ml whole milk
  • 1/2 cup 100g granulated sugar
  • 1/2 cup 100g semolina (rava)
  • 2 tablespoons 30ml ghee
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions
 

Make the caramel:

  • In a small saucepan, combine the sugar and water over medium heat. Bring to a boil and cook, without stirring, until the sugar caramelizes and turns a deep golden brown. Be careful not to overcook, or the caramel will become bitter.
  • Carefully pour the caramel into the bottom of a 6-inch (15cm) square baking dish. Swirl the dish to coat the bottom evenly. Set aside.

Make the custard:

  • In a medium saucepan, combine the milk, sugar, and semolina. Bring to a boil over medium heat, stirring constantly. Reduce the heat to low and simmer for 2-3 minutes, or until the semolina is cooked through.
  • Remove the saucepan from the heat and stir in the ghee, eggs, and vanilla extract until well combined.
  • Pour the custard mixture into the prepared baking dish.
  • Place the baking dish in a preheated oven at 350°F (175°C) and bake for 30 minutes, or until the custard is set.
  • Allow the custard to cool completely before unmolding and serving.

Notes

  • If you want a richer caramel flavor, use brown sugar instead of granulated sugar.
  • To prevent the caramel from sticking to the pan, make sure to swirl the pan to coat the bottom evenly before pouring in the custard mixture.
  • If you don't have a square baking dish, you can use a round one. Just make sure to adjust the baking time accordingly.
  • To unmold the custard, run a knife around the edges of the dish to loosen the custard. Then, invert the dish onto a serving plate.
