In a large bowl, cream together the oil and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Add the dry ingredients to the wet ingredients alternately with the milk, beating until just combined.
Stir in the walnuts and apples. Pour the batter into the prepared pan and bake for 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- For a moister cake, soak the apples in a bowl of water with a tablespoon of lemon juice for 30 minutes before adding them to the batter.
- If you want to add spices to your cake, try adding 1/2 teaspoon of nutmeg or 1/4 teaspoon of cloves to the dry ingredients.
- To make a glaze for your cake, combine 1 cup of powdered sugar with 1-2 tablespoons of milk or apple cider until smooth. Drizzle the glaze over the cooled cake.
