Ingredients
  

  • 177 ml ¾ cup vegetable oil
  • 400 g 2 cups sugar
  • 2 large eggs beaten
  • 15 ml 3 teaspoons vanilla extract
  • 360 g 3 cups all-purpose flour
  • 7.5 ml 1 ½ teaspoons baking soda
  • 5 ml 1 teaspoon salt
  • 2.5 ml ½ teaspoon ground cinnamon
  • 100 g 1 cup walnuts, coarsely chopped
  • 680 g 3 generous cups apples, coarsely chopped, fresh, unpeeled, and uncooked
  • 1 Bundt or tube pan
  • Wax paper

Instructions
 

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour your Bundt or tube pan.
  • In a large bowl, cream together the oil and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  • In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Add the dry ingredients to the wet ingredients alternately with the milk, beating until just combined.
  • Stir in the walnuts and apples. Pour the batter into the prepared pan and bake for 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

  • For a moister cake, soak the apples in a bowl of water with a tablespoon of lemon juice for 30 minutes before adding them to the batter.
  • If you want to add spices to your cake, try adding 1/2 teaspoon of nutmeg or 1/4 teaspoon of cloves to the dry ingredients.
  • To make a glaze for your cake, combine 1 cup of powdered sugar with 1-2 tablespoons of milk or apple cider until smooth. Drizzle the glaze over the cooled cake.
