Shami Kebab Recipe

Ingredients
  

  • 1 cup 280 grams chana dal, soaked for 2-4 hours
  • 1 pound 450 grams boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup 25 grams chopped cilantro
  • 1/4 cup 25 grams chopped mint leaves
  • 1/2 teaspoon 3 grams ground ginger
  • 1/2 teaspoon 3 grams ground garlic
  • 1 teaspoon 6 grams garam masala
  • 1/2 teaspoon 3 grams turmeric powder
  • 1/2 teaspoon 3 grams red chili powder
  • 1/4 teaspoon 1.5 grams salt
  • 1/4 cup 60 ml vegetable oil, for frying

Instructions
 

  • Cook the chicken and dal. In a large pot, combine the chicken, dal, ginger, garlic, garam masala, turmeric powder, red chili powder, and salt. Add enough water to cover the chicken and dal by 1 inch. Bring to a boil, then reduce heat to low and simmer until the chicken and dal are cooked through, about 20 minutes.
  • Drain the chicken and dal mixture. Drain the chicken and dal mixture in a colander and let cool slightly.
  • Grind the chicken and dal mixture. In a food processor, grind the chicken and dal mixture until smooth. Add the cilantro, mint leaves, and 1/4 cup of water and grind until well combined.
  • Form the kebabs. Shape the chicken and dal mixture into small patties.
  • Fry the kebabs. Heat the vegetable oil in a large skillet over medium heat. Fry the kebabs in batches until golden brown and cooked through, about 3 minutes per side.
  • Serve the kebabs immediately. Serve the kebabs hot with your favorite dipping sauce.

Notes

For a smoother texture, you can strain the chicken and dal mixture before grinding it.
To make sure the kebabs hold their shape, make sure the chicken and dal mixture is well chilled before forming the kebabs.
You can also bake the kebabs instead of frying them. To bake the kebabs, preheat the oven to 375 degrees F (190 degrees C). Place the kebabs on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown and cooked through.
Serve the kebabs with your favorite dipping sauce, such as mint chutney, tamarind chutney, or raita.
