- 227 g 8 oz macaroni noodles
- 80 g 1/2 cup sweet gherkins, diced
- 100 g 3/4 cup red bell pepper, diced
- 55 g 1/3 cup celery, thinly sliced
- 45 g 1/3 cup red onion, diced
- 2 large hard-boiled eggs diced
- 175 g 3/4 cup mayonnaise
- 70 g 1/4 cup sour cream
- 15 ml 1 Tablespoon sweet pickle juice
- 15 ml 1 Tablespoon red wine vinegar
- 15 ml 1 Tablespoon granulated sugar
- 10 ml 2 teaspoons Dijon mustard
- 1.25 ml 1/4 teaspoon black pepper
- 0.625 ml 1/8 teaspoon garlic powder
- 0.3125 ml 1/8 teaspoon crushed red pepper (optional)
Cook the macaroni noodles according to package directions. Drain and rinse with cold water until cool.
In a large bowl, combine the cooked macaroni noodles, sweet gherkins, red bell pepper, celery, red onion, and hard-boiled eggs.
In a separate bowl, whisk together the mayonnaise, sour cream, sweet pickle juice, red wine vinegar, granulated sugar, Dijon mustard, black pepper, and garlic powder.
Pour the dressing over the macaroni mixture and toss to coat.
If desired, stir in the crushed red pepper.
Chill for at least 30 minutes before serving.
