Ingredients
  

Chicken:

  • 1 pound 450 grams boneless, skinless chicken breast or thighs, cut into 1-inch cubes (about 2.5 cm)

Marinade:

  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of red pepper flakes optional

Other:

  • 12 wooden skewers soaked in water for at least 30 minutes to prevent burning
  • Bell peppers onions, cherry tomatoes, or other vegetables of your choice, cut into chunks (optional)
  • Plain yogurt or hummus for serving (optional)

Instructions
 

  • Marinate the chicken: In a large bowl, combine olive oil, lemon juice, oregano, paprika, garlic powder, salt, pepper, and red pepper flakes (if using). Add the chicken cubes and toss to coat evenly. Cover and refrigerate for at least 2 hours, or up to 24 hours for maximum flavor.
  • Prepare the skewers: While the chicken marinates, soak the wooden skewers in water for at least 30 minutes to prevent burning. If using vegetables, thread them onto the skewers along with the chicken pieces, alternating between chicken and vegetables for even cooking.
  • Preheat the grill or broiler: Preheat your grill or broiler to medium-high heat.
  • Grill or broil the kebabs: Grill or broil the kebabs for 8-10 minutes per side, or until cooked through. Be sure to turn them halfway through cooking so they brown evenly.
