Ingredients
  

  • 1 clove garlic minced
  • 2 green onions thinly sliced
  • 1 tablespoon miso paste
  • 2 tablespoons unsalted butter softened
  • 7 ounces broccoli florets
  • 1 1/2 tablespoons olive oil
  • 2 cod loins about 10 ounces each
  • 1/2 lemon cut into wedges
  • Cooked brown rice for serving

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Finely chop the garlic and thinly slice the green onions.
  • In a bowl, combine the miso paste, butter, garlic, and green onions. Mix well and set aside.
  • Place the broccoli florets in a large roasting pan or baking sheet. Drizzle with olive oil and sprinkle with a pinch of salt. Roast for 5 minutes.
  • While the broccoli is roasting, tear off two pieces of aluminum foil large enough to wrap the cod loins.
  • Place a cod loin in the center of each piece of foil. Season the fish lightly with salt and pepper.
  • Spoon the miso butter mixture on top of each cod loin. Fold the foil up around the fish to create a loose pouch, making sure not to seal it too tightly.
  • Remove the roasting pan from the oven and carefully place the cod foil pouches on top of the broccoli.
  • Return the pan to the oven and roast for an additional 12 minutes, or until the cod is cooked through.
  • Carefully open the foil pouches and squeeze lemon wedges over the fish. Serve the miso butter cod and roasted broccoli with cooked brown rice.
