Ingredients
  

For the pie crust:

  • 1 store-bought pie crust or 1 1/4 cups all-purpose flour, 1/2 teaspoon salt, 1/2 cup cold unsalted butter, and 3 tablespoons ice water
  • 1 1/2 pounds fresh peaches peeled and sliced (about 6 cups)
  • 6 ounces fresh raspberries about 1 cup
  • 1/2 cup granulated sugar 100 grams
  • 2 tablespoons cornstarch 16 grams
  • 1 tablespoon lemon juice 15 ml
  • 1/4 teaspoon ground cinnamon 1.25 ml

For the crumb topping:

  • 3/4 cup all-purpose flour 93 grams
  • 1/2 cup packed light brown sugar 100 grams
  • 1/4 cup cold unsalted butter cubed (56 grams)

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Roll out the pie crust and place it in a 9-inch pie plate. Prick the bottom with a fork.
  • Line the crust with foil, then weight it down with pie weights or dried beans. Bake for 10 minutes.
  • Remove the weights and foil and bake the crust for 5 more minutes.
  • Take out of the oven and let it cool. Set the oven temperature to 375°F (190°C).

Making the pie filling:

  • In a bowl, combine the peaches, raspberries, sugar, cornstarch, lemon juice, and cinnamon. Toss gently.
  • Pour the filling into the cooled pie crust. Bake for 35 minutes.

Making the crumb topping:

  • While the pie is baking, make the topping. In another bowl, combine the flour, sugar, and butter. Using a pastry cutter or fork, rub the butter into the dry ingredients until it resembles coarse or fine crumbs.
  • Sprinkle the crumb topping over the pie, then return it to the oven and bake for an additional 12-15 minutes, or until golden brown. If necessary, cover the edges of the pie with foil to prevent over-browning. Let the pie cool completely before serving.

Notes

  • If you don't have fresh raspberries, you can use frozen raspberries.
  • If your peaches aren't very ripe, you can add a little more sugar to the filling.
  • This pie can also be served with a scoop of ice cream.
