Ingredients
  

  • 2 tablespoons vegetable oil 30ml
  • 1/2 lb andouille sausage sliced (225g)
  • 1 onion chopped (100g)
  • 1 green bell pepper chopped (100g)
  • 1 red bell pepper chopped (100g)
  • 2 cloves garlic minced (5g)
  • 1 cup long-grain white rice 180g
  • 2 cups chicken broth 480ml
  • 1 14.5 oz can diced tomatoes, undrained (425g)
  • 1/2 teaspoon salt 2g
  • 1/4 teaspoon black pepper 1g
  • 1/4 teaspoon cayenne pepper 1g
  • 1/2 cup chopped fresh parsley 50g

Instructions
 

  • Heat the oil in a large pot or Dutch oven over medium heat.
  • Add the andouille sausage and cook until browned on all sides.
  • Add the onion, green bell pepper, and red bell pepper and cook until softened, about 5 minutes.
  • Stir in the minced garlic and cook for 1 minute.
  • Add the rice, chicken broth, diced tomatoes, salt, black pepper, and cayenne pepper.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  • Stir in the chopped parsley.
  • Cover and cook for an additional 5 minutes, or until the rice is tender and the liquid is absorbed.
  • Serve hot.
