- 2 tablespoons vegetable oil 30ml
- 1/2 lb andouille sausage sliced (225g)
- 1 onion chopped (100g)
- 1 green bell pepper chopped (100g)
- 1 red bell pepper chopped (100g)
- 2 cloves garlic minced (5g)
- 1 cup long-grain white rice 180g
- 2 cups chicken broth 480ml
- 1 14.5 oz can diced tomatoes, undrained (425g)
- 1/2 teaspoon salt 2g
- 1/4 teaspoon black pepper 1g
- 1/4 teaspoon cayenne pepper 1g
- 1/2 cup chopped fresh parsley 50g
Heat the oil in a large pot or Dutch oven over medium heat.
Add the andouille sausage and cook until browned on all sides.
Add the onion, green bell pepper, and red bell pepper and cook until softened, about 5 minutes.
Stir in the minced garlic and cook for 1 minute.
Add the rice, chicken broth, diced tomatoes, salt, black pepper, and cayenne pepper.
Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
Stir in the chopped parsley.
Cover and cook for an additional 5 minutes, or until the rice is tender and the liquid is absorbed.
Serve hot.
