- 2 tablespoons vegetable oil 30ml
- 1 onion chopped (100g)
- 2 cloves garlic minced (5g)
- 1 14.5 oz can diced tomatoes, undrained (425g)
- 1 14.5 oz can chicken broth (425ml)
- 1 cup long-grain white rice 180g
- 1/2 teaspoon salt 2g
- 1/4 teaspoon black pepper 1g
- 1/4 teaspoon cumin 1g
- 1/4 teaspoon oregano 1g
Heat the oil in a large pot over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.
Stir in the minced garlic and cook for 1 minute.
Add the diced tomatoes, chicken broth, rice, salt, pepper, cumin, and oregano.
Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid has been absorbed.
Fluff with a fork before serving.
