  • 2 cups fresh pig's blood
  • 1/2 cup beef suet grated
  • 1 large onion finely chopped
  • 1 teaspoon ground ginger
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground mace
  • 1/2 teaspoon salt

Step 1: Prepare the Ingredients

  • In a large mixing bowl, combine the steel-cut oats, fresh pig's blood, grated beef suet, finely chopped onion, ground ginger, ground allspice, ground black pepper, ground mace, and salt.

Step 2: Mix Thoroughly

  • Mix all the ingredients together until well combined. Ensure that the spices are evenly distributed throughout the mixture.

Step 3: Prepare the Casing

  • Rinse the casing (either natural hog or synthetic casing) thoroughly under cold water. If using natural casing, soak it in cold water for about 30 minutes to soften it.

Step 4: Stuff the Casing

  • Using a sausage stuffer or a funnel, stuff the mixture into the prepared casing, leaving a little room at the ends for tying.

Step 5: Tie the Ends

  • Tie the ends of the casing securely with kitchen twine to seal the mixture inside.

Step 6: Cook the Black Pudding

  • Place the stuffed casing in a large pot of boiling water. Reduce the heat to a simmer and cook for about 1 hour, making sure the water doesn't boil too vigorously.

Step 7: Remove and Cool

  • Once cooked, carefully remove the black pudding from the water and allow it to cool slightly.
