Ingredients
  

  • 2 cups 240g all-purpose flour
  • 1/2 teaspoon 3g salt
  • 1 cup 227g unsalted butter, softened
  • 1/2 cup 100g granulated sugar
  • 2 egg yolks
  • 2 teaspoons vanilla extract
  • 1/3 cup 60g sanding sugar (optional)

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour and salt.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolks and vanilla extract until combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • If desired, roll the dough balls in sanding sugar before placing them on the prepared baking sheet.
  • Bake for 10-12 minutes, or until the edges are just starting to turn golden brown.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For chewier cookies, chill the dough for at least 30 minutes before baking.
  • For crispier cookies, bake for a few minutes longer.
  • If you don't have sanding sugar, you can use regular granulated sugar instead.
  • You can also add other toppings to your cookies, such as chocolate chips, nuts, or dried fruit.
