Ingredients
  

  • 1 pound 450 grams pasta (such as penne or linguine)
  • 1 tablespoon 15 ml olive oil
  • 1 medium onion chopped
  • 1 green bell pepper chopped
  • 2 cloves garlic minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 14.5 ounce can diced tomatoes, undrained
  • 1 8 ounce package cream cheese, softened
  • 1 cup 240 ml heavy cream
  • 1 pound 450 grams seafood (shrimp, crab, or a mix)
  • 1/4 cup 60 ml chopped fresh parsley for garnish

Instructions
 

  • Cook pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and set aside.
  • Sauté vegetables: In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the onion and green pepper and cook until softened, about 5 minutes. Add the garlic, Cajun seasoning, salt, and pepper and cook for 1 minute more.
  • Add tomatoes and cream cheese: Stir in the diced tomatoes and cream cheese. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the cream cheese is melted and the sauce is thickened.
  • Add seafood and cook: Stir in the seafood and cook until opaque, about 3-5 minutes.
  • Combine pasta and sauce: Add the cooked pasta to the sauce and toss to coat.
  • Serve: Garnish with fresh parsley and serve immediately.
