- 1 pound 450 grams pasta (such as penne or linguine)
- 1 tablespoon 15 ml olive oil
- 1 medium onion chopped
- 1 green bell pepper chopped
- 2 cloves garlic minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 14.5 ounce can diced tomatoes, undrained
- 1 8 ounce package cream cheese, softened
- 1 cup 240 ml heavy cream
- 1 pound 450 grams seafood (shrimp, crab, or a mix)
- 1/4 cup 60 ml chopped fresh parsley for garnish
Cook pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and set aside.
Sauté vegetables: In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the onion and green pepper and cook until softened, about 5 minutes. Add the garlic, Cajun seasoning, salt, and pepper and cook for 1 minute more.
Add tomatoes and cream cheese: Stir in the diced tomatoes and cream cheese. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the cream cheese is melted and the sauce is thickened.
