For the pudding:
- 1 cup 200g granulated sugar
- 1 large egg
- 1 tablespoon 15ml smooth apricot jam
- 1 cup 130g all-purpose flour
- 1 teaspoon 5ml baking soda
- 1 pinch of salt
- 2 tablespoons 30g unsalted butter, melted
- 1 tablespoon 15ml white vinegar
- 1 cup 250ml whole milk
- 2 tablespoons 30g cocoa powder
For the sauce:
- 1 cup 200g granulated sugar
- 1/2 cup 125ml boiling water
- 1/2 cup 125ml heavy cream
- 1/4 cup 55g unsalted butter
- 1/4 cup 25g cocoa powder
- 1 teaspoon 5ml vanilla extract
Make the Pudding Batter:
In a large mixing bowl, beat together the sugar, egg, and apricot jam until well combined and slightly fluffy.
In a separate bowl, sift together the flour, baking soda, salt, and cocoa powder.
Gradually add the dry ingredients to the egg mixture, alternating with additions of melted butter and vinegar.
Slowly pour in the milk, stirring continuously until a smooth batter forms.
Bake the Pudding:
Pour the batter into the prepared baking dish, spreading it out evenly.
Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean and the pudding is springy to the touch.
