Ingredients
  

For the pudding:

  • 1 cup 200g granulated sugar
  • 1 large egg
  • 1 tablespoon 15ml smooth apricot jam
  • 1 cup 130g all-purpose flour
  • 1 teaspoon 5ml baking soda
  • 1 pinch of salt
  • 2 tablespoons 30g unsalted butter, melted
  • 1 tablespoon 15ml white vinegar
  • 1 cup 250ml whole milk
  • 2 tablespoons 30g cocoa powder

For the sauce:

  • 1 cup 200g granulated sugar
  • 1/2 cup 125ml boiling water
  • 1/2 cup 125ml heavy cream
  • 1/4 cup 55g unsalted butter
  • 1/4 cup 25g cocoa powder
  • 1 teaspoon 5ml vanilla extract

Instructions
 

Preheat and Grease:

  • Preheat your oven to 350°F (175°C).
  • Grease a deep 8x8 inch (20x20cm) baking dish with butter or non-stick cooking spray.

Make the Pudding Batter:

  • In a large mixing bowl, beat together the sugar, egg, and apricot jam until well combined and slightly fluffy.
  • In a separate bowl, sift together the flour, baking soda, salt, and cocoa powder.
  • Gradually add the dry ingredients to the egg mixture, alternating with additions of melted butter and vinegar.
  • Slowly pour in the milk, stirring continuously until a smooth batter forms.

Bake the Pudding:

  • Pour the batter into the prepared baking dish, spreading it out evenly.
  • Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean and the pudding is springy to the touch.

Make the Sauce:

  • While the pudding is baking, prepare the sauce.
  • In a saucepan over medium heat, combine the sugar, boiling water, heavy cream, butter, and cocoa powder.
  • Stir continuously until the sugar has dissolved and the mixture is smooth and well combined.
  • Remove from heat and stir in the vanilla extract.

Serve:

  • Once the pudding is baked, remove it from the oven and poke holes all over the surface using a skewer or fork.
  • Pour the warm sauce over the hot pudding, allowing it to seep into the holes and cover the entire surface.
  • Let the pudding stand for a few minutes to absorb the sauce before serving.
