Ingredients
  

  • 3 large eggs
  • 180 ml 3/4 cup milk
  • 113 g 1/2 cup unsalted butter, melted
  • 473 g 1 box Betty Crocker™ Super Moist™ spice cake mix
  • 107 g 1 packet butterscotch pudding mix
  • 180 ml 3/4 cup sour cream
  • 236 ml 1 cup apple pie filling

Streusel Topping (optional):

  • 28 g 2 tablespoons unsalted butter, softened
  • 60 g 1/4 cup granulated sugar
  • 60 g 1/4 cup all-purpose flour

Instructions
 

  • Preheat oven to 175°C (350°F).
  • In a large bowl or stand mixer, beat together the eggs, milk, melted butter, cake mix, pudding mix, and sour cream until well combined.
  • Gently fold in the apple pie filling.
  • Spoon the batter into a Texas muffin tin lined with large parchment paper cups, filling each cup almost to the top for best results.
  • Optional Streusel Topping: In a small bowl, combine the softened butter, sugar, and flour with a fork until crumbly. Sprinkle the streusel topping evenly over the muffin batter before baking.
  • Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
