  • 1 cup all-purpose flour 125 grams
  • 1 tablespoon ghee clarified butter
  • 1/4 teaspoon salt
  • 1/4 cup water 60 milliliters
  • 1/4 teaspoon cardamom powder
  • Oil for deep frying

For Sugar Syrup:

  • 1/2 cup sugar 100 grams
  • 1/4 cup water 60 milliliters
  • 1/4 teaspoon cardamom powder

For Garnish (Optional):

  • Finely chopped nuts like almonds, pistachios

Instructions
 

Prepare Dough:

  • In a mixing bowl, combine all-purpose flour, ghee, salt, and cardamom powder.
  • Gradually add water and knead until a smooth dough forms.
  • Cover the dough and let it rest for 15 minutes.

Shape Khajas:

  • After resting, knead the dough briefly again.
  • Divide the dough into equal-sized portions.
  • Roll out each portion into thin circles (about 5-6 inches in diameter).
  • Use a knife to make vertical cuts on each circle, but do not cut all the way through.

Fry Khajas:

  • Heat oil for deep frying in a pan over medium heat.
  • Once the oil is hot, carefully slide in the prepared khajas.
  • Fry until they turn golden brown and crispy.
  • Remove the fried khajas from the oil and drain excess oil on paper towels.

Prepare Sugar Syrup:

  • In a separate saucepan, combine sugar, water, and cardamom powder.
  • Cook over medium heat until the sugar completely dissolves and the syrup slightly thickens (about 5 minutes).
  • Remove from heat and set aside.

Soak Khajas:

  • While the sugar syrup is still warm, dip the fried khajas into the syrup.
  • Ensure that each khaja is coated well with the syrup.
  • Allow the khajas to soak in the syrup for a few minutes.

Garnish (Optional):

  • If desired, sprinkle finely chopped nuts over the soaked khajas for garnish.
