  • 2 tablespoons 16g cornstarch
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 box 3 oz or 85g Jell-O instant pudding mix (check label to ensure dairy-free)

Mix Dry Ingredients:

  • In a medium saucepan, whisk together sugar, cornstarch, and salt until well combined.

Add Almond Milk:

  • Gradually pour almond milk into the saucepan with the dry ingredients, whisking continuously to ensure there are no lumps.

Cook Over Medium Heat:

  • Place the saucepan over medium heat. Bring the mixture to a gentle boil, stirring constantly to prevent burning. This should take about 5-7 minutes.

Incorporate Vanilla Extract:

  • Once the mixture begins to boil, remove the saucepan from heat. Stir in vanilla extract until fully incorporated.
