  • 1/4 cup 50g granulated sugar
  • 3 tablespoons 24g unsweetened cocoa powder
  • 2 tablespoons 15g cornstarch
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 3 ounces 85g dairy-free dark chocolate, chopped

Instructions
 

  • In a medium saucepan, combine almond milk, granulated sugar, cocoa powder, cornstarch, and salt.
  • Whisk the ingredients together until smooth and well combined.
  • Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to thicken, about 5-7 minutes.
  • Once the mixture has thickened, remove the saucepan from heat.
  • Add vanilla extract and chopped dairy-free dark chocolate to the mixture in the saucepan.
  • Stir until the chocolate is completely melted and the pudding is smooth and creamy.
  • Pour the pudding into individual serving dishes or ramekins.
  • Cover the dishes with plastic wrap, making sure the wrap touches the surface of the pudding to prevent a skin from forming.
  • Refrigerate the pudding for at least 2 hours, or until chilled and set.
