  • 1 tablespoon 14g olive oil
  • 1 large onion chopped (about 1 cup)
  • 1 lb 450g ground beef
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1 14.5 ounce can diced tomatoes, undrained
  • 1 15 ounce can tomato sauce
  • 1 cup 160g frozen corn
  • 1 cup 180g elbow macaroni
  • 1 cup 240ml water
  • Salt and pepper to taste
  • Sour cream or yogurt for serving (optional)

Instructions
 

  • Brown beef and onions: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook for 5 minutes, until softened. Add the ground beef and cook, breaking it up with a spoon, until browned.
  • Add spices and tomatoes: Stir in the paprika, cumin, and garlic powder and cook for 1 minute, until fragrant. Add the diced tomatoes, tomato sauce, corn, macaroni, and water. Season with salt and pepper to taste.
  • Simmer: Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the macaroni is cooked through.
  • Serve: Serve hot, topped with a dollop of sour cream or yogurt, if desired.
