Ingredients

  • 1/3 cup 30g cocoa powder
  • 1/4 teaspoon salt
  • 3 cups 710ml whole milk
  • 4 large egg yolks
  • 2 tablespoons 28g unsalted butter
  • 2 teaspoons 10ml vanilla extract

Combine Dry Ingredients:

  • In a medium saucepan, whisk together the sugar, cornstarch, cocoa powder, and salt until well combined.

Add Milk:

  • Gradually whisk in the whole milk until smooth and no lumps remain.

Heat Mixture:

  • Place the saucepan over medium heat and cook, whisking constantly, until the mixture comes to a boil. This should take about 5-7 minutes.

Temper Egg Yolks:

  • In a separate bowl, whisk the egg yolks until smooth. Gradually add about 1 cup of the hot milk mixture to the egg yolks, whisking constantly. This will temper the eggs, preventing them from curdling when added to the hot pudding mixture.

Combine Mixtures:

  • Pour the tempered egg mixture back into the saucepan with the remaining hot milk mixture, whisking constantly to combine.

Cook Until Thickened:
