Ingredients
  

  • 1 bunch kale washed, stems removed, and chopped
  • 1/2 cup 60g dried cranberries
  • 1/2 cup 60g walnuts, toasted and roughly chopped
  • 1/4 cup 40g crumbled feta cheese (optional)

For the Dressing:

  • 1/4 cup 60ml olive oil
  • 2 tablespoons 30ml apple cider vinegar
  • 1 tablespoon 15ml honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine the chopped kale, dried cranberries, and walnuts.
  • In a small bowl or jar, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
