- 1 1/2 cups 180g All-Purpose Flour
- 1 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 2 large Eggs
- 1/2 cup 120ml Milk
- 1 tsp Vanilla Extract
- For Coating:
- 2 cups 240g Desiccated Coconut
- 1/2 cup 120ml Milk
- 2 cups 240g Powdered Sugar
- 2 tbsp Cocoa Powder
- 1/4 tsp Vanilla Extract
- 2 tbsp 30g Butter, melted
Step 1: Preparing the Cake
Preheat your oven to 350°F (175°C). Grease and flour a 9x9 inch baking pan.
In a mixing bowl, combine sugar, hot water, and butter. Mix until the sugar is dissolved and the butter is melted.
In another bowl, sift together flour, baking powder, and salt.
Add eggs one at a time into the sugar mixture, beating well after each addition.
Stir in milk and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until well combined and smooth.
Pour the batter into the prepared baking pan.
Bake in the preheated oven for about 25 minutes or until a toothpick inserted into the center comes out clean.
Allow the cake to cool completely in the pan.
Step 2: Coating the Cake
Once the cake has cooled, cut it into squares of desired size.
In a shallow dish, mix together desiccated coconut and powdered sugar.
In another shallow dish, mix milk, cocoa powder, and vanilla extract until well combined.
Dip each cake square into the cocoa mixture, ensuring it's coated on all sides.
Immediately roll the coated cake square in the coconut mixture, pressing gently to adhere the coconut.
Place the coated cake squares on a wire rack to set.
Repeat the process with the remaining cake squares.
Once all the cake squares are coated, drizzle melted butter over the tops for added richness.
Let the cakes sit at room temperature for about an hour to set completely before serving.
Enjoy your delicious homemade Lamington Cake!
