  • 2 lbs 900g Yukon Gold potatoes, peeled and quartered
  • 4 oz 113g cream cheese, softened
  • 1/4 cup 60ml milk, warmed
  • 4 tablespoons 57g unsalted butter
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste

Instructions
 

  • Boil potatoes: Place potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil over high heat, then reduce heat to medium and simmer for 15-20 minutes, or until potatoes are fork-tender.
  • Drain and dry: Drain the potatoes in a colander and return them to the pot. Let them steam for a few minutes to remove excess moisture.
  • Mash: Add the cream cheese, warm milk, and butter to the potatoes. Use a potato masher or electric mixer to mash until smooth and creamy.
  • Season: Stir in the salt and pepper to taste.
