Ingredients
  

Crust:

  • 1 1/2 cups 150g graham cracker crumbs
  • 5 tbsp 70g unsalted butter, melted
  • 1/4 cup 50g granulated sugar

Filling:

  • 32 oz 900g cream cheese, softened to room temperature
  • 1 3/4 cups 350g granulated sugar
  • 1/4 cup 30g all-purpose flour
  • 1/4 tsp salt
  • 2 tsp 10ml vanilla extract
  • 4 large eggs
  • 1/2 cup 120ml sour cream

Instructions
 

  • Make the crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into an even layer on the bottom of a 9-inch springform pan. Bake for 10 minutes. Let cool completely.
  • Make the filling: In a large bowl, beat cream cheese and sugar with an electric mixer on medium speed until smooth and creamy. Beat in flour and salt until combined. Beat in vanilla.
  • Add eggs: Beat in eggs one at a time, mixing just until combined after each addition. Be careful not to overmix.
  • Fold in sour cream: Gently fold in sour cream until just combined.
  • Water bath (bain-marie): Wrap the outside of the springform pan tightly with aluminum foil (to prevent water from seeping in). Place the springform pan in a larger roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the springform pan.
  • Bake: Bake in the preheated oven for 55-70 minutes, or until the cheesecake is just set around the edges and the center is slightly jiggly.
  • Cool and chill: Turn off the oven and crack the oven door open. Let the cheesecake cool in the oven for 1 hour. Transfer to a wire rack and cool completely. Refrigerate for at least 4 hours or overnight before serving.
