Crust:
- 1 1/2 cups 150g graham cracker crumbs
- 5 tbsp 70g unsalted butter, melted
- 1/4 cup 50g granulated sugar
Filling:
- 32 oz 900g cream cheese, softened to room temperature
- 1 3/4 cups 350g granulated sugar
- 1/4 cup 30g all-purpose flour
- 1/4 tsp salt
- 2 tsp 10ml vanilla extract
- 4 large eggs
- 1/2 cup 120ml sour cream
Make the crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into an even layer on the bottom of a 9-inch springform pan. Bake for 10 minutes. Let cool completely.
Make the filling: In a large bowl, beat cream cheese and sugar with an electric mixer on medium speed until smooth and creamy. Beat in flour and salt until combined. Beat in vanilla.
