  • 1 tablespoon 15 ml maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 cup 120 grams pineapple chunks (fresh or canned)
  • 1/4 cup 20 grams unsweetened shredded coconut
  • Optional toppings: additional pineapple chunks shredded coconut, and mint leaves

Instructions
 

Prepare the Chia Pudding:

  • In a mixing bowl, combine coconut milk, chia seeds, maple syrup, and vanilla extract.
  • Stir well until all ingredients are thoroughly combined.
  • Let the mixture sit for 5 minutes, then stir again to prevent clumps.
  • Cover the bowl and refrigerate for at least 2 hours, or overnight, until the mixture thickens into a pudding-like consistency.

Prepare the Pineapple and Coconut Topping:

  • If using fresh pineapple, chop it into small chunks. If using canned pineapple, drain the chunks from the juice.
  • Toast the shredded coconut in a dry skillet over medium heat until lightly golden, stirring frequently to prevent burning. This should take about 2-3 minutes.
  • Remove the toasted coconut from the heat and set it aside to cool.

Assemble the Parfaits:

  • Once the chia pudding has set, remove it from the refrigerator.
  • Stir the pudding to ensure it's smooth and creamy.
  • Take two serving glasses or jars.
  • Spoon a layer of chia pudding into each glass, filling them about one-third of the way.
