Polvorones Recipe

Polvorones are traditional Spanish Christmas cookies that are loved by people of all ages. They are known for their crumbly texture and delicious almond flavor. Polvorones are also very easy to make, so they are a great project for young cooks.

Ingredients
  

  • 1 1/2 cups 195 grams all-purpose flour
  • 3/4 cup 105 grams raw almonds
  • 1 stick 5 ounces, 142 grams unsalted butter, softened
  • 3/4 cup 150 grams granulated sugar
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon kosher salt or 1/4 teaspoon fine salt
  • Powdered sugar for dusting, optional

Instructions
 

  • Preheat oven to 350 degrees F (175 degrees C).
  • Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour and salt.
  • In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  • Fold in the almonds.
  • Drop the dough by rounded tablespoons onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  • Let the polvorones cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Dust with powdered sugar, if desired.

Notes

  • To make the polvorones chewier, bake for 10 minutes. To make them crispier, bake for 12 minutes.
  • If you don't have raw almonds, you can use roasted almonds instead. Just be sure to chop them before adding them to the dough.
  • For a fun twist, try adding 1/2 cup of chocolate chips or dried cranberries to the dough.
  • Store the polvorones in an airtight container at room temperature for up to 3 days.
