  • 4 large yellow onions thinly sliced (about 1 kg)
  • 1 teaspoon 2 grams sugar
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon black pepper plus more to taste
  • 1/2 cup 120 ml dry white wine (optional)
  • 6 cups 1.4 liters beef or vegetable broth
  • 1 bay leaf
  • 4 slices about 60 grams crusty bread
  • 1/2 cup 60 grams grated Gruyère cheese (optional)

Instructions
 

  • Caramelize the onions: In a large pot or Dutch oven, melt butter over medium heat. Add onions, sugar, salt, and pepper. Cook, stirring occasionally, for 20-25 minutes, until onions are deeply caramelized and golden brown.
  • Deglaze the pot (optional): Add white wine, scraping up any browned bits from the bottom of the pot. Cook until the wine has reduced by half, about 2 minutes.
  • Simmer the soup: Add broth and bay leaf to the pot. Bring to a boil, then reduce heat to low and simmer for 15 minutes to blend the flavors.
