Ingredients
  

  • 6 slices whole wheat bread
  • 1 large potato 150 grams, boiled and sliced
  • 1 medium carrot 50 grams, grated
  • 1 small cucumber 100 grams, thinly sliced
  • ½ small bell pepper 50 grams, thinly sliced
  • 1 small tomato 100 grams, thinly sliced
  • 4 tablespoons mayonnaise
  • 1 tablespoon green chutney mint chutney
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons butter softened

Instructions
 

Prepare Ingredients:

  • Boil the potato until fork-tender. Once cooled, peel and slice it thinly.
  • Grate the carrot.
  • Thinly slice the cucumber, bell pepper, and tomato.

Mix Sauces:

  • In a small bowl, mix the mayonnaise and green chutney (mint chutney) together until well combined. Set aside.

Assemble Sandwiches:

  • Take three slices of bread and spread the mayonnaise-chutney mixture evenly over them.
  • Arrange the sliced potato, grated carrot, cucumber, bell pepper, and tomato on top of the mayonnaise mixture.
  • Sprinkle salt and pepper to taste over the vegetables.
  • Top each sandwich with the remaining three slices of bread.

Grill the Sandwiches:

  • Heat a skillet or sandwich maker over medium heat.
  • Spread softened butter evenly on both sides of each sandwich.
  • Place the sandwiches in the skillet or sandwich maker and grill until golden brown and crisp on both sides, about 2-3 minutes per side.
