- 14 tablespoons 200g unsalted butter
- 1/4 cup 50g granulated sugar
- 2 cups 400g packed dark brown sugar
- 2 cups 250g all-purpose flour, plus 2 tablespoons (25g)
- 1/2 teaspoon 3g baking soda
- 1/4 teaspoon 1g baking powder
- 1/2 teaspoon 3g salt
- 1 large egg
- 1 large egg yolk
- 1 tablespoon 15ml vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
In a skillet, melt 10 tablespoons of butter over medium-high heat. Whisk constantly until the butter starts to brown, about 3-4 minutes. Pour the browned butter into a bowl and add the remaining 4 tablespoons of butter to the same bowl. Set aside.
In a separate bowl, whisk together the granulated sugar, 1/4 cup of brown sugar, flour, baking soda, and baking powder.
Add the remaining brown sugar and salt to the butter mixture and whisk until smooth. Whisk in the egg, egg yolk, and vanilla extract.
Combine the butter mixture with the dry ingredients, stirring until a dough forms.
You can either roll the dough out to 1/2-inch thick and use a cookie cutter to cut out shapes, or you can simply roll the dough into balls and place them on the prepared baking sheet. Sprinkle the cookies with granulated sugar.
Bake for 12-14 minutes, or until the cookies begin to set.
- For chewier cookies, chill the dough for at least 30 minutes before baking.
- For crispier cookies, bake for a few minutes longer.
