Ingredients
  

  • 2 sticks 1 cup / 227 grams of softened butter
  • 1/2 cup 100 grams of packed light brown sugar
  • 1/4 cup 50 grams of granulated sugar
  • 1 1/2 teaspoons 6 grams of vanilla extract
  • 1/2 teaspoon 3 grams of kosher salt
  • 2 cups 240 grams of all-purpose flour
  • 1 cup 110 grams of pecan halves, finely chopped

Instructions
 

  • Preheat oven to 350° F (177° C). Line two baking sheets with parchment paper.
  • In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the vanilla extract and salt.
  • Gradually add the flour and mix until just combined. Stir in the chopped pecans.
  • Shape the dough into 1 1/2-inch balls and place them on the prepared baking sheets, spacing them about 2 inches apart.
  • Use the bottom of a glass to flatten each cookie to a 1/2-inch thickness. Press a pecan half into the top of each cookie.
  • Bake for 18-20 minutes, or until the cookies are golden brown.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
