  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup 115g unsalted butter, softened
  • 1/2 cup 100g granulated sugar
  • 1/4 cup 50g packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup 75g mixed candied fruit, chopped
  • 1/4 cup 40g golden raisins
  • 1/4 cup 40g dried cranberries
  • 1/4 cup 40g chopped almonds

Instructions
 

Step 1: Preparing the Dry Ingredients

  • In a bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

Step 2: Creaming the Butter and Sugars

  • In a separate large bowl, using a hand mixer or stand mixer, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy.

Step 3: Adding Wet Ingredients

  • Beat in the egg and vanilla extract into the butter-sugar mixture until thoroughly combined.

Step 4: Mixing Dry and Wet Ingredients

  • Gradually add the dry ingredients into the wet mixture, mixing until just combined.

Step 5: Adding Fruits and Nuts

  • Gently fold in the chopped candied fruit, golden raisins, dried cranberries, and chopped almonds into the dough until evenly distributed.

Step 6: Chilling the Dough
