- 3 large eggs
- 180 ml 3/4 cup milk
- 113 g 1/2 cup unsalted butter, melted
- 473 g 1 box Betty Crocker™ Super Moist™ spice cake mix
- 107 g 1 packet butterscotch pudding mix
- 180 ml 3/4 cup sour cream
- 236 ml 1 cup apple pie filling
Streusel Topping (optional):
- 28 g 2 tablespoons unsalted butter, softened
- 60 g 1/4 cup granulated sugar
- 60 g 1/4 cup all-purpose flour
Preheat oven to 175°C (350°F).
In a large bowl or stand mixer, beat together the eggs, milk, melted butter, cake mix, pudding mix, and sour cream until well combined.
Gently fold in the apple pie filling.
Spoon the batter into a Texas muffin tin lined with large parchment paper cups, filling each cup almost to the top for best results.
Optional Streusel Topping: In a small bowl, combine the softened butter, sugar, and flour with a fork until crumbly. Sprinkle the streusel topping evenly over the muffin batter before baking.
Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
