  • 1 1/2 cups 255 grams semi-sweet chocolate chips

Instructions

Prepare the Cake:

  • Preheat your oven to the temperature specified on the cake mix box.
  • Grease and flour two 9-inch round cake pans.
  • Prepare the cake batter according to the package instructions.
  • Divide the batter evenly between the prepared cake pans.
  • Bake the cakes according to the package instructions.
  • Once baked, let the cakes cool completely.

Prepare the Ice Cream Layers:

  • Take the ice cream out of the freezer to soften slightly while the cakes cool.
  • Line the same cake pans used for baking with plastic wrap, leaving some overhang for easy removal.
  • Scoop the softened ice cream into the cake pans, spreading it evenly.
  • Cover the ice cream with plastic wrap and freeze until firm, at least 2 hours or overnight.

Assemble the Cake:

  • Once the cake layers and ice cream layers are completely cooled and set, remove them from their pans.
  • Place one cake layer on a serving plate or cake stand.
  • Remove the plastic wrap from one of the ice cream layers and place it on top of the cake layer.
  • Top the ice cream layer with the second cake layer.
  • Return the cake to the freezer while you prepare the ganache.

Make the Ganache:

  • In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
  • Place the chocolate chips in a heatproof bowl.
  • Pour the hot cream over the chocolate chips and let it sit for 1-2 minutes.
  • Stir the mixture until smooth and glossy.
  • Let the ganache cool for a few minutes.

Finish the Cake:

  • Remove the cake from the freezer and pour the ganache over the top, allowing it to drip down the sides.
  • Return the cake to the freezer to set the ganache, about 15-30 minutes.
  • Once the ganache is set, decorate the cake with whipped cream and sprinkles or other toppings of your choice.
  • Serve immediately or return to the freezer until ready to serve. Enjoy your homemade ice cream cake!
