Method
 

  1. Prepare the Potatoes
    Preheat your oven to 200°C (400°F).
  2. Wash and scrub the russet potatoes thoroughly.
  3. Poke a few holes in each potato using a fork to allow steam to escape.
  4. Rub the potatoes with a little olive oil and sprinkle with salt for crispy skin.
  5. Place them on a baking sheet and bake for 45-60 minutes, or until soft inside.
  6. Marinate the Carne Asada
    In a mixing bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, paprika, salt, black pepper, and oregano.
  7. Add the flank or skirt steak and coat it evenly with the marinade.
  8. Cover and let it marinate for at least 30 minutes (or overnight for maximum flavor).
  9. Cook the Carne Asada
    Heat a grill or pan over medium-high heat.
  10. Cook the steak for 3-5 minutes per side, depending on thickness and preferred doneness.
  11. Remove from heat and let it rest for 5 minutes, then slice into thin strips.
  12. Assemble the Baked Potato
    Slice open the baked potatoes and fluff the inside with a fork.
