Ingredients
  

  • 2 large eggs
  • 1/2 tablespoon water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon cooking oil
  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon chopped fresh chives optional

Instructions
 

  • In a medium bowl, whisk together the eggs, water, salt, and pepper.
  • Heat the cooking oil in a non-stick skillet over medium heat.
  • Add the onion and bell pepper to the pan and cook until softened, about 3 minutes.
  • Add the egg mixture to the pan and cook until the bottom is set, about 2 minutes.
  • Sprinkle the cheese over the omelette and fold it in half.
  • Cook for another minute, or until the cheese is melted.
  • Garnish with chives, if desired, and serve immediately.

Notes

  • For a fluffier omelette, separate the eggs and whisk the whites until stiff peaks form. Then, gently fold the whites into the yolks.
