  • 2 large eggs
  • 1/2 tablespoon water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon cooking oil
  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon chopped fresh chives optional

Method
 

  1. In a medium bowl, whisk together the eggs, water, salt, and pepper.
  2. Heat the cooking oil in a non-stick skillet over medium heat.
  3. Add the onion and bell pepper to the pan and cook until softened, about 3 minutes.
  4. Add the egg mixture to the pan and cook until the bottom is set, about 2 minutes.
  5. Sprinkle the cheese over the omelette and fold it in half.
  6. Cook for another minute, or until the cheese is melted.
  7. Garnish with chives, if desired, and serve immediately.

Notes

  • For a fluffier omelette, separate the eggs and whisk the whites until stiff peaks form. Then, gently fold the whites into the yolks.
