Ingredients
  

  • 2 large eggs
  • 1 medium onion finely chopped (about 1 cup, 150 g)
  • 2 medium tomatoes finely chopped (about 1 cup, 200 g)
  • 1 green chili finely chopped (optional)
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon coriander powder
  • 1/4 teaspoon garam masala powder
  • Salt to taste
  • 2 tablespoons vegetable oil
  • 1 sprig curry leaves
  • 1/4 cup chopped cilantro optional

Instructions
 

  • Whisk the eggs in a bowl until well combined.
  • Heat the oil in a pan over medium heat. Add the curry leaves and green chilies (if using) and saute for a few seconds until fragrant.
  • Add the onions and saute until softened and translucent, about 5 minutes.
  • Add the tomatoes and cook until softened and mushy, about 5 minutes.
  • Add the turmeric powder, red chili powder, coriander powder, and garam masala powder. Cook for 30 seconds, stirring constantly, until fragrant.
  • Add the whisked eggs and cook, stirring constantly, until scrambled and cooked through.
  • Season with salt to taste.
  • Garnish with chopped cilantro (if using) and serve hot with rice or roti.
