- 2 large eggs
- 1 medium onion finely chopped (about 1 cup, 150 g)
- 2 medium tomatoes finely chopped (about 1 cup, 200 g)
- 1 green chili finely chopped (optional)
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/4 teaspoon coriander powder
- 1/4 teaspoon garam masala powder
- Salt to taste
- 2 tablespoons vegetable oil
- 1 sprig curry leaves
- 1/4 cup chopped cilantro optional
Whisk the eggs in a bowl until well combined.
Heat the oil in a pan over medium heat. Add the curry leaves and green chilies (if using) and saute for a few seconds until fragrant.
Add the onions and saute until softened and translucent, about 5 minutes.
Add the tomatoes and cook until softened and mushy, about 5 minutes.
Add the turmeric powder, red chili powder, coriander powder, and garam masala powder. Cook for 30 seconds, stirring constantly, until fragrant.
Add the whisked eggs and cook, stirring constantly, until scrambled and cooked through.
Season with salt to taste.
Garnish with chopped cilantro (if using) and serve hot with rice or roti.
