Ingredients
  

  • 2 15 ounce cans chickpeas, rinsed and drained
  • 1/2 cup 75g chopped cucumber
  • 1/4 cup 40g chopped red onion
  • 1/4 cup 40g chopped fresh parsley
  • 1/4 cup 40g crumbled feta cheese

For the tzatziki dressing:

  • 1/2 cup 120g plain Greek yogurt
  • 1/4 cup 60ml grated cucumber (squeeze out excess moisture)
  • 1 clove garlic minced
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
