Method
 

  1. Preheat Your Oven
    Set your oven to 400°F (200°C). While it’s heating, wash and scrub the potatoes thoroughly. Pat them dry.
  2. Prep and Bake the Potatoes
    Rub each potato with a little olive oil, then sprinkle with salt. Place them on a baking sheet and bake for 45–60 minutes, or until the skin is crisp and the inside is fork-tender.
  3. Prepare the Chicken
    While the potatoes bake, shred or dice your cooked chicken. You can lightly season or warm it in a skillet if desired. Add BBQ sauce or spices for extra flavor.
  4. Cook Bacon (If Using)
    In a pan, cook bacon slices until crispy. Let them cool slightly, then crumble them for topping.
  5. Slice and Fluff the Potatoes
    Once baked, carefully cut a slit across each potato and gently press the ends to open them up. Use a fork to fluff the inside slightly.
  6. Load with Goodness
    Start by adding a small pat of butter (optional), then layer in the chicken, shredded cheese, sour cream, bacon crumbles, and green onions. Customize with hot sauce or extra toppings.
