Ingredients

  • 2 cups 480 ml unsweetened almond milk
  • 1/2 cup 120 ml heavy cream
  • 1/4 cup 48 g granulated erythritol or other low-carb sweetener equivalent
  • 3 large egg yolks
  • 2 tablespoons 16 g cornstarch or arrowroot powder
  • 1 tablespoon 15 ml vanilla extract
  • 1/8 teaspoon salt

Instructions

Prepare Ingredients:

  • Measure out all ingredients as listed above.

Mix Dry Ingredients:

  • In a medium-sized mixing bowl, whisk together the granulated erythritol (or low-carb sweetener of choice), cornstarch (or arrowroot powder), and salt until well combined.

Combine Wet Ingredients:

  • In a separate bowl, whisk together the unsweetened almond milk, heavy cream, and egg yolks until smooth.

Heat Mixture:

  • Pour the wet ingredients mixture into a saucepan and place it over medium heat.

Gradually Add Dry Ingredients:

  • Gradually whisk in the dry ingredients mixture into the saucepan with the wet ingredients, stirring constantly to prevent lumps from forming.

Cook Until Thickened:

  • Continue to cook the mixture over medium heat, stirring constantly, until it thickens and coats the back of a spoon. This should take about 5-7 minutes.

Remove from Heat:

  • Once the mixture has thickened, remove the saucepan from the heat.

Add Vanilla Extract:

  • Stir in the vanilla extract until well incorporated.

Cool and Serve:

  • Allow the pudding to cool slightly before transferring it to serving dishes or ramekins.

Chill:

  • Cover the pudding with plastic wrap, ensuring it touches the surface to prevent a skin from forming, and chill in the refrigerator for at least 2 hours, or until set.

Serve:

  • Serve chilled, optionally topped with whipped cream or berries, and enjoy your low-carb vanilla pudding!
