Ingredients
  

  • 1 cup 120 grams all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup 113 grams unsalted butter, softened
  • 1/2 cup 100 grams granulated sugar
  • 1/2 cup 100 grams mango puree
  • 2 large eggs
  • 1 teaspoon mango essence or vanilla extract

Instructions
 

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x4 inch loaf pan.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the mango puree, eggs, and mango essence or vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

  • For a richer mango flavor, use homemade mango puree. To make mango puree, simply peel, pit, and blend fresh mangos in a blender until smooth.
  • If you don't have mango essence, you can use vanilla extract instead.
  • To prevent the cake from sticking to the pan, be sure to grease and flour it well.
  • Don't overbake the cake, or it will be dry.
