- 1.5 pounds 680g boneless, skinless chicken breasts, cut in half lengthwise
- 1 teaspoon 2g dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons 30ml olive oil
- 1/4 cup 60ml chicken broth
- 1/2 cup 120ml heavy cream
- 1/2 cup 55g grated Parmesan cheese
- 1/4 cup 40g chopped sun-dried tomatoes
- 1/4 cup 60ml fresh basil leaves, chopped
Season chicken: Pat chicken dry with paper towels. Season both sides with Italian seasoning, salt, and pepper.
Sear chicken: Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side, or until golden brown.
Deglaze pan: Pour chicken broth into the skillet and scrape up any browned bits from the bottom of the pan.
