Ingredients
  

  • 2 pounds 900g Yukon Gold potatoes, peeled and quartered
  • 1/4 cup 55g unsalted butter
  • 1/4 cup 60ml chicken broth or vegetable broth
  • Salt and pepper to taste

Instructions
 

  • Place the peeled and quartered potatoes in a large pot and cover with cold water. Add a generous pinch of salt.
  • Bring the pot to a boil over high heat. Once boiling, reduce heat to medium-low and simmer for 15-20 minutes, or until the potatoes are fork-tender.
  • While the potatoes are cooking, combine the butter and chicken broth or vegetable broth in a small saucepan over medium heat. Heat until the butter is melted.
  • Drain the cooked potatoes and return them to the pot.
  • Pour the hot broth mixture over the potatoes and mash with a potato masher or electric mixer until smooth and creamy.
  • Season generously with salt and pepper to taste. Serve hot.
