- 2 pounds 900g Yukon Gold potatoes, peeled and quartered
- 1/4 cup 55g unsalted butter
- 1/4 cup 60ml chicken broth or vegetable broth
- Salt and pepper to taste
Place the peeled and quartered potatoes in a large pot and cover with cold water. Add a generous pinch of salt.
Bring the pot to a boil over high heat. Once boiling, reduce heat to medium-low and simmer for 15-20 minutes, or until the potatoes are fork-tender.
While the potatoes are cooking, combine the butter and chicken broth or vegetable broth in a small saucepan over medium heat. Heat until the butter is melted.
Drain the cooked potatoes and return them to the pot.
