Ingredients
  

  • 1/2 cup 120ml whole milk
  • 1/4 cup 50g granulated sugar
  • 3 tablespoons 21g unsweetened cocoa powder
  • 2 tablespoons 30ml vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1/2 cup 62.5g all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup 45g semisweet chocolate chips
  • 1/4 cup 50g packed light brown sugar
  • 3/4 cup 180ml boiling water

Instructions
 

  • In a microwave-safe bowl, whisk together milk, granulated sugar, cocoa powder, vegetable oil, and vanilla extract until smooth.
  • Add all-purpose flour, baking powder, and salt to the bowl. Stir until just combined; do not overmix.
  • Sprinkle semisweet chocolate chips evenly over the batter in the bowl. Do not stir.
  • In a separate microwave-safe bowl, combine packed light brown sugar and boiling water. Stir until sugar is dissolved.
  • Gently pour the brown sugar mixture over the batter in the first bowl. Again, do not stir.
  • Place the bowl with the batter and brown sugar mixture in the microwave and cook on high for about 8 minutes, or until the cake is set and springs back when lightly touched.
  • Let the cake cool for a few minutes before serving. Enjoy warm with whipped cream or ice cream, if desired.
