Ingredients
  

  • 1 bag 12 oz tortilla chips (340g)
  • 1 lb ground beef 450g
  • 1 onion chopped (100g)
  • 1 15 oz can black beans, rinsed and drained (425g)
  • 1 15 oz can diced tomatoes, undrained (425g)
  • 1 teaspoon chili powder 5g
  • 1/2 teaspoon cumin 2g
  • Salt and pepper to taste

For the cheese sauce:

  • 2 tablespoons butter 30g
  • 2 tablespoons all-purpose flour 25g
  • 1 cup milk 240ml
  • 1 cup shredded cheddar cheese 115g
  • 1/4 cup Monterey Jack cheese 40g
  • 1/4 cup Colby cheese 40g
  • 1/4 teaspoon salt 1g
  • 1/4 teaspoon black pepper 1g

Instructions
 

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  • Add the chopped onion and cook until softened.
  • Stir in the black beans, diced tomatoes, chili powder, cumin, salt, and pepper.
  • Spread the tortilla chips on a baking sheet.
  • Top with the beef mixture.

Make the cheese sauce:

  • In a saucepan, melt the butter over medium heat.
  • Whisk in the flour and cook for 1 minute.
  • Gradually whisk in the milk until smooth.
  • Bring to a simmer and cook, stirring constantly, until thickened.
  • Remove from heat and stir in the shredded cheeses until melted. Season with salt and pepper.
  • Pour the cheese sauce over the nachos.
  • Bake for 10-15 minutes, or until the cheese sauce is melted and bubbly.
  • Serve immediately with your favorite toppings, like sour cream, salsa, guacamole, and jalapeƱos.
