- 1 bag 12 oz tortilla chips (340g)
- 1 lb ground beef 450g
- 1 onion chopped (100g)
- 1 15 oz can black beans, rinsed and drained (425g)
- 1 15 oz can diced tomatoes, undrained (425g)
- 1 teaspoon chili powder 5g
- 1/2 teaspoon cumin 2g
- Salt and pepper to taste
For the cheese sauce:
- 2 tablespoons butter 30g
- 2 tablespoons all-purpose flour 25g
- 1 cup milk 240ml
- 1 cup shredded cheddar cheese 115g
- 1/4 cup Monterey Jack cheese 40g
- 1/4 cup Colby cheese 40g
- 1/4 teaspoon salt 1g
- 1/4 teaspoon black pepper 1g
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
Add the chopped onion and cook until softened.
Stir in the black beans, diced tomatoes, chili powder, cumin, salt, and pepper.
Spread the tortilla chips on a baking sheet.
Top with the beef mixture.
Make the cheese sauce:
In a saucepan, melt the butter over medium heat.
Whisk in the flour and cook for 1 minute.
Gradually whisk in the milk until smooth.
Bring to a simmer and cook, stirring constantly, until thickened.
Remove from heat and stir in the shredded cheeses until melted. Season with salt and pepper.
Pour the cheese sauce over the nachos.
Bake for 10-15 minutes, or until the cheese sauce is melted and bubbly.
