  • 1/2 cup 113g unsalted butter
  • 1/2 cup 120ml milk
  • 1/4 cup 30g unsweetened cocoa powder
  • 1/2 cup 40g quick-cooking oats
  • 1 tsp 5ml vanilla extract

Instructions
 

  • Prepare a baking sheet: Line a baking sheet with parchment paper or wax paper.
  • Combine ingredients in saucepan: In a medium saucepan, combine sugar, butter, milk, and cocoa powder.
  • Bring to a boil: Heat the mixture over medium heat, stirring constantly, until the butter is melted and the mixture comes to a full rolling boil.
  • Boil for one minute: Let the mixture boil for one full minute, continuing to stir constantly.
  • Remove from heat and add oats & vanilla: Remove the pan from the heat and stir in the quick-cooking oats and vanilla extract.
  • Drop onto baking sheets: Immediately drop by rounded tablespoons onto the prepared baking sheet.
  • Cool and set: Let the cookies cool completely on the baking sheet to set. This will take about 30 minutes to an hour.
