Ingredients
  

  • 1 1/2 cups 180g all-purpose flour
  • 1/2 cup 113g unsalted butter, softened
  • 1 cup 250g peanut butter
  • 1/2 cup 100g packed light brown sugar
  • 1/2 cup 100g granulated sugar
  • 1 teaspoon 5ml vanilla extract
  • 1 large egg at room temperature
  • 3/4 teaspoon 3g baking powder

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a medium bowl, whisk together the flour and baking powder.
  • In a large bowl, cream together the butter and sugars until light and fluffy.
  • Beat in the peanut butter until well combined.
  • Add the egg and vanilla extract and beat until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
  • Press down on the dough balls with a fork to create a criss-cross pattern.
  • Bake for 10-12 minutes, or until the edges are golden brown.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a chewier cookie, bake for 10 minutes. For a crispier cookie, bake for 12 minutes.
Let the cookies cool completely before storing them in an airtight container at room temperature for up to 3 days.
