  • 1/2 cup 100g chopped kimchi, plus 2 tablespoons kimchi juice
  • 1/2 cup 75g chopped onion
  • 1 cup 150g cooked rice (day-old is best)
  • 1 tablespoon soy sauce
  • 1/2 teaspoon sesame oil
  • 1 green onion thinly sliced, for garnish
  • Sesame seeds for garnish (optional)
  • Fried egg for serving (optional)

Instructions
 

  • Scramble egg (optional): If using a fried egg, fry it in a separate pan while preparing the fried rice.
  • Sauté kimchi and onion: Heat the vegetable oil in a large skillet or wok over medium heat. Add the kimchi and onion and cook for 3-5 minutes, until softened.
