Ingredients
  

  • 3/4 cup 150g granulated sugar
  • 1/3 cup 40g all-purpose flour
  • 1/4 teaspoon salt
  • 3 large eggs separated
  • 2 cups 480ml whole milk
  • 1/2 teaspoon vanilla extract
  • 1 box 12 ounces or 340g vanilla wafers
  • 5 ripe bananas sliced
  • 1/4 teaspoon cream of tartar

For the topping:

  • 3 tablespoons granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup 240ml heavy whipping cream

Instructions
 

Prepare the Pudding Mixture:

  • In a medium saucepan, whisk together sugar, flour, and salt.
  • Separate the egg yolks from the whites. Set the whites aside.
  • In a bowl, whisk egg yolks and milk until well combined.
  • Gradually whisk the egg mixture into the dry ingredients in the saucepan until smooth.

Cook the Pudding:

  • Place the saucepan over medium heat.
  • Cook the mixture, stirring constantly, until it thickens and coats the back of a spoon, about 8-10 minutes.
  • Remove from heat and stir in vanilla extract. Set aside to cool slightly.

Layer the Pudding:

  • In a large serving dish, arrange a layer of vanilla wafers on the bottom.
  • Top the wafers with a layer of sliced bananas.
  • Pour half of the pudding mixture over the bananas.

Repeat the Layers:

  • Repeat the layers with another layer of wafers, bananas, and the remaining pudding mixture.
