  • 2 cups unsweetened almond milk 480 ml
  • 1/4 cup cornstarch 32g
  • 1/4 cup unsweetened cocoa powder 20g
  • 1/4 cup granulated monk fruit sweetener 48g
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

Prepare the Pudding Mixture:

  • In a small bowl, combine the cornstarch and cocoa powder. Mix well to ensure there are no lumps.
  • In a saucepan, pour the almond milk and add the granulated monk fruit sweetener. Stir until the sweetener dissolves.
  • Gradually whisk in the dry mixture (cornstarch and cocoa powder) into the saucepan with almond milk. Whisk continuously to avoid clumps.

Cook the Pudding Mixture:

  • Place the saucepan over medium heat. Stir constantly until the mixture thickens, about 5-7 minutes. It should have a pudding-like consistency.

Add Flavor:

  • Once the mixture has thickened, remove the saucepan from heat. Stir in the vanilla extract and a pinch of salt. Mix until well combined.

Chill and Serve:

  • Pour the pudding into serving cups or bowls. Let it cool for a few minutes at room temperature.
  • Cover each cup with plastic wrap, ensuring the wrap touches the surface of the pudding to prevent a skin from forming.
  • Refrigerate the pudding for at least 2 hours or until it's thoroughly chilled and set.
