Prepare the Steamer:Fill the steamer with water and bring it to a boil. If you're using a traditional steamer, ensure the water doesn't touch the mould. Prepare the Coconut:Grate fresh coconut finely and set it aside. If you’re using desiccated coconut, lightly toast it for extra flavor. Mix the Dry Ingredients:In a mixing bowl, combine the rice flour, sugar (if using), and salt. Mix evenly. Add Warm Water:Slowly pour in warm water, a little at a time, and mix with your hands or a spoon until the mixture becomes a crumbly dough. You want it moist but not too sticky. Prepare the Mould:Lightly grease the mould with a little bit of oil or coconut oil to prevent sticking. If you're using a traditional Putu mould, layer it with grated coconut and then press the dough inside. Alternate layers of dough and coconut until the mould is full. Steam the Putu:Place the mould in the steamer and cover it with a damp cloth (optional). Steam for about 10-15 minutes until the Putu is cooked and firm to the touch. Serving:Once steamed, carefully remove the Putu from the mould. Serve hot, garnished with extra grated coconut if desired. It can be enjoyed as a snack, breakfast, or dessert. Optional Additions:For a different flavor, add a few drops of pandan essence or a pinch of cardamom to the dough mixture for an aromatic twist.
